Almond Cakes a French recipe
Pre heat the oven to 180c or 350f gas 4. In a large bowl whisk the egg yolks and sugar over a pan of simmering water. Until very thick and mousse like remove from heat. Sift the flour over the surface, then with a large metal spoon, gently fold it in adding the ground almonds and butter. Coat the base of a buttered baking tray with the flaked almonds. Evenly cover these with the almond mixture and sprinkle some more flakes on top. Bake in the oven for about 30 mins. Cut into fingers and leave to cool slightly before turning on to a wire rack to cool. Then sprinkle with icing sugar
