Sift flour and salt into a bowl add the butter and rub in until it resembles breadcrumbs

Stir in the sugar and enough water to bind together cover and chill for 30 mins

On a floured surface roll out the pastry and line a 25cm /10 ins round flan tin { loose bottomed } press well into the tin

Preheat the oven to 200c/ 400f/ gas6 prick the base of the pastry case. Bake for about 10 mins until lightly coloured

Arrange the fruit in the pastry case cook in the oven until fruit is almost tender.Sprinkle with sugar to taste and return to the oven for about 5 mins until the sugar melts and glazes the top you can serve warm or cold
