Ingredients


Asparagus and ham gratin

Gratin D asperges au jambon

prep time 20 to 25 mins

cooking time 20 to 25 mins

serves 4

375g / 12ozs thin asparagus trimmed

salt and pepper

juice of one lemon

1 teaspoon sugar

300ml / ½ pt single cream

200ml / 1/3 pt chicken stock

grated nutmeg

4 slices boiled ham

15g / ½ oz butter

125g / 4ozs grated cheese.



Cook the asparagus in water with salt, lemon juice and sugar added to it.

Leave to cool in the cooking liquid.

Put the cream and stock in a small pan and boil. Until it is reduced by half then season to taste.

Drain the asparagus, divide it into 4 equal sized bundles.

Roll each bundle in a slice of ham.

Place in a buttered oven proof dish.

Pour the reduced mixture over the top and sprinkle with grated cheese.

Bake in a preheated oven at 200c or 400f gas 6. For 20 to 25 mins until bubbling and golden brown serve immediately
