Ingredients


A French Beef Casserole

prep time 10 mins

cooking time 1 hour 40 mins

serves 6

2 tablespoons olive oil

1/2 lb smoked bacon cubed

2 ¼ lbs braising steak cubed

2 tablespoons all purpose flour

4 onions sliced

salt and pepper

1 bottle red wine

1 Bouquet garni chopped

1 cup of mushrooms sliced

1/2 cup of pitted black olives



In a flameproof casserole heat 1 tablespoon of olive oil and cook the bacon.

Coat the meat in the flour and add to the casserole with the onions.

Seal the meat on all sides add the salt and pepper and the wine.

Stir well over a high heat to reduce by half.

Add the bouquet garni and garlic.

Cook over a moderate heat for 1 hoursor until tender.

Saute the mushrooms in the remaining oil.

Strain the contents of the casserole, catching the juices in a clean pan.

Put the meat etc back in the casserole with the mushrooms.

Put the juices back on the heat and add the olives.

Pour back over the casserole and cook for 20 mins.

Remove the bouquet garni and serve hot.
