Biscuit for sorbet recipe

Heat oven to 200c or 400f gas 6.

Make sure that all the ingredients are at room temperature. Lightly butter a baking sheet.

Work the butter and sugar together in a warm bowl with a slotted spoon until creamy. and add the unbeaten egg whites two at a time.

Beat the mixture well between each addition of the eggs. Continue beating while adding the cream and lastly the sieved flour.

When the mixture is quite smooth, pipe small round disks about 2 cm / 3/4in diameter and widely spaced on to the baking sheet.

Bake for about 4 mins until the large thin circles formed are lightly brown.

Quickly remove from the tray with a sharp knife and wrap around a wooden spoon handle to shape

Then let them cool on a wire tray.

Ingredients

100g / 4ozs of butter

100g / 4ozs of caster sugar

100g / 4ozs of flour

2 egg whites size 2

10g of vanilla sugar

Heat the oven to 200c or 400f gas 6

Lightly butter and flour the baking sheet.

Warmthe butter in a bowl and beat until creamy add the sugar.

Beating constantly with a whisk then addthe sieved flour.

Beat the egg whites in a separate bowluntil soft peaks are formed then fold them into the sugar and butter mixture.

Using a small round icingnozzle pipe narrow 6cm /2 ½ ins lengths on to the baking sheet. Spacing them well apart to allow for spreading.

Bake for 6 - 8 mins. When cooked the edges should be coloured

Then cool on a wire rack.
