Trim the celery and chop then place in a pan with melted butter. Add the onions and cook until soft. Then add the water, milk, potatoes, and salt and pepper. Bring to the boil and simmer for 45 mins. Blend in a blender and gradually add the cream. Serve with a few chopped celery leaves.
