Chicken with apples and cider recipe
Cut the chicken into 4 portion. Melt 2 ozs of butter in a frying pan add the chicken and brown the portions all over, then remove and drain. Peel core and slice 2 of the apples sprinkle with salt and pepper and fry in melted butter until they begin to go brown. Sprinkle the flour over and cook gentle stirring occasionally until the flour turns light brown. Add 1/2 pint of cider and bring to the boil stirring constantly. Put the chicken pieces in the sauce and add the bouquet garni. Cover with lid. cook for 1 hour approx Peel core and cut into quarters the remaining 4 apples. Melt 1 ozs of butter in a frying pan and fry the apples until lightly coloured. When the chicken is cooked place on a warm serving dish. Bring the sauce to the boil add the remaining 1/4 pint of cider and boil rapidly for 10 mins. Strain and return to the pan add the apples and cream stir in the 1oz of butter Reheat gently adjust the seasoning pour over chicken and
serve garnished with chopped parsley.
