Ingredients


Chicken a la king

6 chicken breast fillets

30g / 1oz of butter

250g / 8ozs of mushrooms sliced

1 red pepper chopped

1 green pepper chopped

60g / 2ozs of butter extra

300ml / 9½ flozs cream

4 egg yolks

1 tablespoon of brandy


Cut the chicken into bite sized pieces.

Melt the butter in a frying pan.

Add the mushrooms and peppers fry until soft.

Strain the mushrooms and peppers and set to one side.

Melt the extra butter in a frying pan and fry the chicken until golden brown.

Add the cream stir over a low heat until the chicken is tender.

Remove the pan from the heat mix the egg yolks and brandy and stir in with the mushrooms and peppers.

Heat everything gently without letting it boil stirring constantly serve with rice
