A recipe for Chilled Tomato soup
Place the tomatoes and onions in a large saucepan. Then the bouquet garni, peppercorns, cloves, lemon rind, and stock. Cover and simmer until the tomatoes are tender. Remove the bouquet garni then pass the mixture through a sieve or vegetable mill. Add the lemon juice, tabasco sauce and season to taste chill and serve in individual bowls. With whipped cream and sprinkle with the chopped chives or mint.
