A recipe for Chilled Tomato soup

Ingredients


Chilled tomato soup

Creme Evita

serve 6 to 8

1kg / 2lbs of ripe tomatoes quartered

1 onion finely chopped

1 bouquet garni

4 peppercorns

1 clove

1 strip of lemon rind

1ltr of chicken stock

1 teaspoon of lemon juice

few drops of tabasco sauce

salt and pepper

for the garnish

4 tablespoons of double cream

chopped chives or mint


Place the tomatoes and onions in a large saucepan.

Then the bouquet garni, peppercorns, cloves, lemon rind, and stock.

Cover and simmer until the tomatoes are tender.

Remove the bouquet garni then pass the mixture through a sieve or vegetable mill.

Add the lemon juice, tabasco sauce and season to taste chill and serve in individual bowls.

With whipped cream and sprinkle with the chopped chives or mint.
