A chocolate souffle French recipe
Heat the oven to 220c or 425f gas 7. Break up the chocolate and melt in a bowl over a pan of boiling water. When melted remove the pan from the heat and beat in the egg yolks 2 at a time. Sieve 2/ 3 of the sugar and the flour together with the vanilla sugar. Beat this into the chocolate and egg mixture. Beat the egg whites to a soft peak and then add the rest of the sugar, beating constantly until very stiff. Butter and sugar the souffle dish right to the top. Fold in the egg white into the chocolate and yolk mixture with a wooden spatula a third at a time. Do not stir or beat fill the dish to the top. Bake for 30 - 35 mins dust
with icing sugar and serve immediately.
