Ingredients


Soupe de Campagne

Country Soup

serve 6 to 8

3 tablespoons of olive oil

3 onions, finely chopped

2 leaks, finely chopped

6 tomatoes peeled and deseeded and chopped

6 cups of beef stock

salt and pepper

6 ozs grated cheese

Serve the soup with crusty bread



Heat the oil in a large pan and gently cook the onions and the leaks.

Cook but do not let them go brown.

Add the tomatoes and continue cooking until the mixture is like a thick sauce.

Add the stock and season well.

Bring to the boil and add the grated cheese

Simmer gently for about 30 mins.

Serve with fresh crusty bread
