Ingredients

Eggs fried with aubergine and ham recipe

to serve 6

350g of aubergines

salt and pepper

200g onions peeled and chopped

50g of butter

200g of rice

575ml of warm water

2 tablespoons of olive oil

225g frozen peas

200g boiled ham cut thick

6 eggs size 2

pinch of paprika

4 tablespoons of cooking oil

Cut the aubergines into thick slices sprinkle with salt and press between two plates. Melt the butter in a large frying pan over a low heat add the onions and cook until tender.

Add the rice and season well stirring all the time cook for 2 to 3 mins.

Add the warm water stir well cover and leave over a medium heat for 15 mins until the liquid is absorbed.

Meanwhile drain, wash and dry the aubergines cut into cubes and cook in hot oil for 10 mins. Blanch the peas in salted water for 5 mins.

Cut the ham into cubes add it to the aubergines to colour.

Then mix them and the peas into the rice, check the seasoning. Put on a warm dish.

Pour cooking oil into a frying pan and when hot fry the eggs and place on top of the rice serve immediately with homemade tomato sauce recipe on site
