Fillet Steak in pastry
Heat 25g / 1oz of butter in a frying pan and gently the garlic and onions until soft. Then add the mushrooms, salt and pepper and the nutmeg. Keep stirring over a low heat until the mushrooms are cooked then leave to cool. In a clean frying pan melt the rest of the butter. Add the steaks sear on both sides. Remove from the pan and leave to cool. Roll out the pastry and cut into 8 rounds large enough to cover half of the steak. Brush a 2.5cm border around each piece of pastry with the beaten egg. Cut the ham into 8 rounds the same size as the steaks. Place a piece of ham on 4 of the pastry rounds. Then a spoonful of the mushroom mixture, a fillet steak, another mushroom mixture. On top of the steak then a piece of ham and finely top with another pastry round. Seal the edges brush with the beaten egg and cook in a preheated oven. At 220f or 425c gas 7 for 20 mins until golden brown. Serve with a garnish of chervil or parsley sprigs
