French Glazed Carrots

Carrots cooked this way are delicious

serve 4 prep time 15 mins

cooking time 15 to 20 mins

60g / 2ozs butter

500g / 1lb young carrots scraped and quartered lengthways

salt and pepper

pinch of sugar

Garnish

knob of butter

chopped fresh parsley


Melt the butter in a pan. Add the carrots, sugar salt and pepper then cover with water.

Cook slowly for about 15 mins. Until the carrots are soft and the water has evaporated.

Leaving the carrots with a glaze. Place in a warm serving dish.

Garnish with a knob of butter and the chopped parsley
