Melt the butter in a pan. Add the carrots, sugar salt and pepper then cover with water. Cook slowly for about 15 mins. Until the carrots are soft and the water has evaporated. Leaving the carrots with a glaze. Place in a warm serving dish. Garnish with a knob of butter and the chopped parsley
