French Madeleine cakes
Grease 24 scallop shaped madeleine moulds and dust with cornflour. Whisk the yolks with the sugar until creamy and pale. Then gradually whisk in the flour, whisk the egg whites and salt until stiff. Then whisk the cooled butter into the cake mixture. Fold in the egg whites with the essences. Fill the moulds with the mixture and bake in a preheated oven. At 190c or 375f gas 5 for 20 mins. Cool on a wire rack dust with icing sugar and serve
