Skin the tomatoes and slice thinly.

675g / 1½ lb Potatoes (scrubbed and cooked)

Vinaigrette

Salt and pepper

2 Tablespoons chopped fresh herbs Such as chives, parsley or mint

Make the vinaigrette in a large bowl large enough to allow room for turning the potatoes without breaking them.

Peel the potatoes and cut into Slices, season well and turn in the dressing while still hot.

Leave to cool completely.

Correct the seasoning and sprinkle with the chopped herbs before serving.

To vary the flavour add 1 Tablespoons of chopped onion or shallot to the vinaigrette before adding the potatoes.
