Ingredients


French Tomato sauce

Sauce Tomate

500g /1lb fresh tomatoes

1 onion sliced

3 rashers of lean streaky bacon

1 clove of garlic

1 teaspoon of sugar

1 bouquet of garni

salt and pepper


Chop the tomatoes roughly in a pan with the onion.

Add the bacon cut into strips with the crushed garlic, sugar, bouquet garni and seasoning.

Cook over a low heat for about 20 mins or until the tomatoes are both soft and well flavoured.

Sieve or put through a vegetable mill.

Taste and season use as required


Horseradish Sauce recipe


Horseradish Sauce

Sauce Raifort

4 tablespoons of double cream

2 tablespoons grated horseradish

1 tablespoon wine vinegar

Stir the cream with the horseradish.

Then add the sugar, vinegar and seasoning to taste
