Artichokes with garlic recipe

Ingredients

Artichaults Aioli

Artichokes with garlic a typical Provencal appetizer

prep time 30 mins

cooking time 25 mins

4 medium sized globe artichokes

1 slice lemon

1 bay leaf

1 sprig chervil

pinch of salt

675mls / 12flozs garlic mayonnaise recipe

Prepare the artichokes by breaking off the stems.

Twist to remove any tough fibres trim so the artichokes will stand upright.

Trim the points from all the leaves and wash well.

In a large pan of boiling water place the lemon, bay leaf and a pinch of salt.

With the artichokes and cook for 25 mins over a moderate heat.

Remove from the water and allow to cool upside down.

When cooked the bottom leaves will pull away easily.

Fill the artichokes with the garlic mayonnaise.

Garnish with the chervil and serve
