Gratinee onion soup

Soupe a l`oignon gratinee

A classic French onion soup recipe to serve 6

500g / 1¼ lbs onions peeled and finely sliced

75g / 3ozs butter

50g / 2ozs plain flour

6 tablespoons dry white wine

1.5 ltrs / 2½ pts chicken stock

2 pinches of thyme

1 bay leaf

salt and pepper

12 / 18 slices French stick

200g / 7 ozs gruyere grated

Brown the onions in the butter. Add the flour and cook for 2 mins.

Then add the wine, herbs and stock.

Bring to the boil and then simmer for 15 mins.

Place the grated gruyere on the French stick slices.

Then put them under the grill until melted.

Place 2 to 3 slices in each soup bowl.

Now pour the soup over and serve immediately
