Break up the chocolate into small pieces and place in a pan over a gentle heat. Pour over 3 tablespoons of hot milk cover the pan and allow the chocolate to soften. Remove the pan from the heat and whip the contents into a smooth paste. Add a little more hot milk to dilute it. Then add the rest of the milk stirring constantly
do not let it boil at anytime.
