Honey spice cake recipe

225g / 8ozs of plain flour

55g / 2ozs of rye flour

2 teaspoons of baking powder

1 tablespoon of ground cinnamon

1/2 teaspoon of ground ginger

pinch of salt

2 eggs beaten

225g / 8ozs honey warmed until runny

1 teaspoon crushed aniseeds

butter for greasing


Preheat the oven to 190c /375f / gas 5 and butter a 11 x23cm or 5 x 9ins cake tin.

Sift the flours, baking powder, spices except for the aniseed into a bowl add the salt.

Form a well in the centre and pour in the eggs and honey.

Add the aniseed and gradually draw the dry ingredients into the liquid to make a smooth batter.

Pour into a greased tin and bake for approx 40 mins. Or until a skewer inserted into the centre comes out clean.

Remove from the tin about 5 mins after removing from the oven.
