Lemon Mousse a French recipeLemon Mousse 
Beat the sugar and egg yolk together until light and fluffy. Add the grated rind of 2 lemons. Squeeze all the lemons and strain the juice. Dissolve the gelatine in the water. Mix with the lemon juice and quickly strain into the egg mixture. Mix well and put to one side in a cold place until the mousse begins to set. Stir occasionally so it sets evenly. When the mixture is set sufficiently to hold a light trail. Whisk the egg whites stiffly and fold them in lightly.So they are completely incorporated in the mousse. Pour into a serving dish and allow to set, decorate with whipped cream.
