A French Lime souffle recipe
IngredientsLime souffle 60g / 2ozs of butter 1 tablespoon grated lime rind 1/3 cup of castor sugar 1 tablespoon of corn flour 2 tablespoons of plain flour 1 tablespoon of lime juice 1cup of milk 4 eggs separated 2 egg whites 2 tablespoons of castor sugar [ extra ]
Strawberry cream 1 cup of strawberries 1/2 cup of sour cream2 tablespoons of icing sugar To make the cream just blend the ingredients until smooth |
Cream butter, sugar and rind until light and fluffy.
Beat in the lime juice and then heat the milk in a small pan.
Stir in the creamed butter one spoonful at a time stirring constantly until the mixture boils and thickens
Mix in the yolks and transfer to a large bowl.
Beat the egg whites until soft peaks form, then fold them into the souffle mixture in two lots.
Grease a 20cm / 8ins souffle dish carefully pour the mixture in and bake for 35 mins in a moderate oven.
Serve immediately with the strawberry cream.
