Ingredients


Julienne Aux Chapignons

Mushroom vegetable soup

to serve 3 or 4

125g / 4oz mushrooms, cut into julienne strips

1 or 2 carrots, cut into juienne strips

2 turnips, cut into julienne strips

2 potatoes, cut into julienne strips

2 leaks trimmed and cut into julienne strips

3 or 4 cabbage leaves, cut into julienne strips

60g / 2 oz butter

1 ltr - 2 pints of Consomme recipe here

Croutons


Melt the butter in a saucepan over a medium heat add all the vegetables.

Except the mushrooms, and cook until soft.

Add the consomme, cover the pan and simmer for about 30 mins

Or until cooked then add the mushrooms cook for a further 10 mins. serve with croutons.
