makes 1 omelette

3 eggs

salt and pepper

1 tablespoon of butter

1/4 green pepper chopped

2 tomatoes peeled seeded and chopped

2 ozs of ham

Break the eggs into a bowl, season and beat together. Heat the butter in a omelette pan.

When hot add the pepper and ham, cook for 1 to 2 mins.

Then add the tomatoes add the egg mixture next.

When they start to cook shake the pan from time to time.

To prevent it from sticking. When cooked fold in half and tip onto a warm plate and serve immediately
