Heat oven to 200c, 400f, gas mark 6, with baking sheet inside. Line flan tin with pate brisee and chill until required.Melt butter until foaming and cook onions until soft. cut the bacon into small pieces.

Beat eggs and cream and seasoning together.

Season the onions and arrange in pastry case.

Pour in the eggs scatter with the bacon pieces and place on hot baking sheet and then bake for 30 mins or until set and serve warm.

Pate brisee (short pastry)

100g (4oz) butter

225g ( 8oz) flour

1 egg yolk

pinch of salt

1 tablespoon of cold water

Soften the butter in a warm bowl and work into a cream.

Sieve the flour into a mound.

Make a well in the centre and into it drop the yolk,salt and butter.

Work them together with the fingers of one hand and when well mixed together gather in the flour

Add a tablespoon of very cold water, and a second one if necessary.

Until a soft supple ball is formed. Put in the fridge and chill for 30 mins.

Roll out the pastry,fold into four and roll out again.

Chill again for 30 mins before use.
