Pears in red wine a French recipe

Ingredients

Pears in red wine

Compote de Pares au vin rouge

300ml / 1/2 pint of red wine

100g / 4 ozs of sugar

2cm /1ins of cinnamon stick

4 pears

a few browned flaked almonds

Place the wine, sugar and cinnamon in a pan and cook over a gentle heat until the sugar dissolves.

Peel the pears and leave the stalks intact. Place in the hot syrup cover with a lid.

Simmer gently until the pears are translucent.

Turn them once halfway through the cooking time, cook them very slowly.

When the pears are ready remove from the syrup and place on a dish.

Boil the syrup to reduce by half and pour over the pears.

Sprinkle with the almonds and serve cold.
