Ingredients

Pork chops in cider

Cote de Porc Normande

serves 4

1oz / 30g of butter

2 teaspoons of oil

4ozs / 125g button onions peeled

4 pork chops

8ozs / 250g tomatoes skinned & quartered

2 sticks of celery cut into 1inch lengths

2 dessert apples cored & sliced

4ozs button mushrooms washed

3/4 ozs / 22 1/2g plain flour

3/4 pt /15 flozs chicken stock

4 tablespoons still cider { hard }

1 tablespoon dried thyme

salt and pepper

chopped parsley for the garnish

Heat the oil and butter together in a heat proof casserole dish

Add the onions and fry gently until brown.

Add the pork chops next and fry until browned on both sides. Mix the rest of the vegetables and the apple slices . Add to the casserole and cook stirring for 3 mins.

Stir in the flour and cook for 2 to 3 mins. Pour in the cider and stock next. Add the thyme and season to taste.

Cover the casserole and cook in a moderate oven. 350f or gas 4 for 45 mins.

garnish with parsley and serve.
