IngredientsBeignets de pommes de terre Potato fritters with cream cheese 1kg / 2lbs potatoes peeled 100g / 4 ozs cream cheese 2 eggs 2 tablespoons freshly chopped chives or parsley salt and pepper vegetable oil for shallow frying prep time about 30 mins cooking time 15 to 20 mins Grate the potatoes and squeeze them in your hands to extract as much moisture as possible. Then pat dry with paper towels. Put the cream cheese in a bowl. beat until soft. Beat in the eggs then add the potatoes, chives or parsley add salt and pepper to taste. Pour enough oil in a frying pan to come about 1 inch up the sides of the pan. Place over a moderate heat until the oil is hot. Place the potato mixture into the hot oil. One tablespoon at a time spacing them well apart. Fry for about 5 mins each side and then drain on kitchen paper and serve hot. Serve instead of french fries for a change.
