A simple to make soup recipe

Ingredients


Potato and leek soup

Potage aux Poireaxet Pommes de terre

to serve 6

500g / 1lb potatoes quartered length wise and finely sliced

500g / 1lb leeks cleaned and finely sliced

2ltrs of boiling water

salt

30g / 1oz unsalted butter


A simple to make soup

Put the potatoes and leeks in a pan of boiling water.

Cook until the potatoes are starting to break up.

This should take about 15 to 20 mins then add the butter and you are ready to serve.

Or you can press through a sieve and chill.

Then add a little cream and the soup becomes Vichyssoise
