Ingredients


La salade de Pommes de Terre

Potato salad recipe form Perigord France

to serve 6

1kg / 2¼ lbs of potatoes unpeeled

1 clove of garlic cut in half

1 onion sliced

2 tablespoons chopped gherkins

1 tablespoon finely chopped parsley

2 tablespoons finely chopped chives

1 tablespoon chopped tarragon leaves

1 tablespoon of capers

salt and pepper

To make the vinaigrette

2 eggs hard boiled yolks mashed whites chopped

3 tablespoons of vinegar

salt and pepper

4 tablespoons of walnut oil

4 fl ozs of peanut oil


Steam the potatoes, peel and cut into thick slices and keep warm.

Rub the inside of a warm salad bowl with the garlic clove.

Place the potatoes, onion, gherkins, capers and the herbs in the bowl and season with salt and pepper.

Work the egg yolks to a puree add the vinegar, salt and pepper to taste and mix well.

Then add the oils and pour over the salad and lastly add the egg whites.
