French potato salad recipe
Steam the potatoes, peel and cut into thick slices and keep warm. Rub the inside of a warm salad bowl with the garlic clove. Place the potatoes, onion, gherkins, capers and the herbs in the bowl and season with salt and pepper. Work the egg yolks to a puree add the vinegar, salt and pepper to taste and mix well. Then add the oils and pour over the salad and lastly add the egg whites.
