Beat the egg whites until stiff peaks are formed. Heat the oven to 180c or 350f gas 4. Press the potatoes through a sieve to ensure there smoothness. Beat in the softened butter, egg yolks, ham and grated cheese. Season and add a pinch of nutmeg to taste. Beat the mixture thoroughly fold in the stiffly beaten egg whites. Pour into a thickly buttered souffle dish. Bake
for 30 mins and serve straight away.
