A simple to make recipeIngredientsConfiture de frambases a cru Uncooked Raspberry jam recipe 1 kg of ripe raspberries 1 kg of caster sugar 1 teaspoon of brandy or sherry Heat the oven to 150c or 300f gas 2. Hull the raspberries and place them in a wide earthenware bowl. Put the sugar in another bowl of the same size. Place both bowls in the oven and heat very slowly for about 20 / 30 mins. Until both fruit and the sugar are warm to touch. Remove from the oven and add the sugar to the fruit stirring carefully with a wooden spoon. Dissolve the sugar without damaging the fruit. When the sugar is dissolved pour the jam into small pots. Cover the surface with a disc of waxed paper dipped in brandy or sherry. Seal with jam covers and store in a cool dark place
