Ingredients


Chilled fresh raspberry souffle

serves 4

500g / 1lb raspberries

10 flozs cream whipped

125g / 4 ozs caster sugar

icing sugar


Leave a few raspberries for decoration, crush the rest in a bowl.

Add the cream and sugar to the raspberries and mix together.

Take 4 souffle dishes or tall glasses and make a collar of grease proof paper.

Pour in the mixture and place in the fridge.

When ready to serve remove the collar of grease proof paper.

Decorate the top with a few raspberries.

Sprinkle with a little icing sugar and serve
