Salade Bresse

serves 4 to 6

A sophisticated salad for a first course or as an accompaniment to a formal dinner

Prep time 20 mins

1 head endive washed and separated

1 head cos lettuce washed and separated

1 bunch watercress washed

4ozs cherry tomatoes halved

4 cooked chicken breast skinned and thinly sliced

4ozs blue cheese cut into small pieces

16 small pickles thinly sliced

1/2 cup walnuts halves

2 tablespoon each vegetable and walnut oil mixed

2 teaspoons white wine vinegar

3/4 cup fromage frais

2 teaspoons chopped fresh tarragon

salt and pepper



Tear the endive and cos lettuce into pieces and place in a large salad bowl and toss together, with the watercress.

Put the tomatoes, chicken, cheese, pickles and walnuts on top of the lettuce mixture and mix lightly.

Whisk the oils and vinegar together in a bowl. Until thick fold in the fromage frais and tarragon and whisk well. then season to taste.

Drizzle some over the salad and put the rest in a jug to hand round separately.
