Ingredients


Salmon in foil

Saumon en papillote

prep time 10 mins

cooking time 20 to 25 mins

4 salmon steaks 175g / 6ozs each

oil for brushing

1 to 2 tablespoons of lemon juice

1 to 2 teaspoons chopped fresh herbs

salt

freshly ground pepper

50g / 2ozs of butter


Scrape the scales from the skin of the salmon wash well and dry with a paper towel.

Brush 4 squares of foil lightly with oil.

Place a piece of salmon on each.

Sprinkle with lemon juice, herbs and salt and pepper.

Add a knob of butter Draw up the foil and pinch the edges together to seal well.

Transfer to a baking sheet preheat the oven 200c or 400f gas 6.

Place in the oven and cook for 20 to 25 mins.
