Ingredients


Sausages with pureed celeriac

250mls / 8 flozs water

salt and pepper

1/2 teaspoon dried marjoram

1/2 teaspoon grated lemon rind

1/2 kg /1lb potatoes peeled and chopped

1/2 kg /1lb celeriac peeled and sliced

1 onion peeled and chopped

4 to 8 sausages of your choice

2 flozs / 50mls hot milk

75g / 3ozs gruyere cheese grated


Place the water in a pan with the seasoning, marjoram and lemon rind bring to the boil.

Add the onion, celeriac and the potatoes. Reduce to a low heat and simmer for 20 mins or until the vegetables are tender.

Drain the vegetables and blend or press through a sieve, cook the sausages.

Stir in the milk and cheese. Beat well until the cheese as melted.

Spoon into a warm serving dish. Top with the sausages and serve at once.
