Soak beans overnight the next day drain rinse well and place in pan. Cover with water and bring to the boil then simmer for 1 hr drain and set aside. Heat oil in frying pan and cook bacon for 5 mins add onions,garlic,carrots and celery cook for 5 mins more. Pour the stock in and put the sausage in whole simmer for 25 mins with the lid on pan. Add the drained beans simmer for a further 10 mins. Remove the sausage and slice return to pan
serve with a little chopped parsley sprinkled on top.
