A recipe for Tarte Citron
Line a loose bottomed 10ins flan tin with the short crust pastry. Prick the base with a fork, now make the filling. Put the lemon rind and juice with the sugar, eggs plus egg white. Beat them well together then beat in the cream. The mixture should be smooth and thick. Pour into the pastry base and bake in a preheated oven. At 190c or 375f gas 5 for 30 mins or until set and golden, allow to cool.
To make the topping Heat the lemon slices in a little water over a low heat until tender approx 10 mins. Remove from the heat drain the lemon slices, Keep about 75mls / 3 flozs of the liquid. Add the sugar and stir over a gentle heat until dissolved. Bring to the boil. Add the lemon slices and cook rapidly until they are coated in the thick syrup. Remove and use to decorate the tart. Leave to cool and serve
