How to make Veal JardiniereIngredientsVeal Jardiniere Veal with garden vegetables A colourful garnish of vegetables any vegetables will do as well serves 4 prep time 25 mins cooking time 40 mins 4 lge veal chops oil for frying 1 tablespoon of butter 1 carrot peeled and diced 12 sm onions peeled 1 tablespoon flour 1½ cups beef stock 6 tablespoons white wine salt and pepper 90g / 3ozs green beans trimmed and sliced 60g / 2ozs peas Heat 2 tablespoons of oil in a large frying pan. Fry the chops on both sides until browned, Melt the butter in a medium sauce pan add the onions and carrots. Cook slowly to soften, sprinkle the flour over and cook until golden brown. Add the stock, wine, salt and pepper and bring to the boil. Cook until thick then pour into the frying pan with the veal after removing the oil. Add the peas and beans and cook until the veal is tender about 25 mins. Veal with garden vegetables
