How to make A warm Lentil SaladIngredientsWarm lentil salad prep time 10 mins plus 3 to 4 hours soaking cooking time 45 mins serves 4 375g / 12ozs green lentils soaked 3 to 4 hours
2 carrots peeled 1 leek thinly sliced 125g / 4ozs celery chopped 200g / 7ozs smoked streaky bacon diced 1 tablespoon of oil 1 tablespoon snipped chives 1 onion studded with 1 clove 1 bay leaf pinch of dried thyme 1 garlic clove peeled
For vinaigrette 200ml / 1/3 pt walnut oil 6 tablespoons wine vinegar 1 tablespoon Dijon mustard salt and pepper Put the lentils in a bowl of water and soak for 3 to 4 hours. Drain well and put in a large pan. Add one carrot, bay leaf, thyme, garlic together with the onion. Cover with cold water and bring to the boil, then simmer for 30 to 35 mins. Remove from the heat and drain. Remove the vegetables, bay leaf and garlic. Slice the other carrot thinly and blanch in salted boiling water with the leek and celery drain well. Whisk the vinaigrette ingredients together. Then fry the bacon in the oil until crisp. Stir in the blanched vegetables and fried bacon gently into the lentils.
