Nantaises Butter Biscuits

Ingredients


Galettes Nantaises

Nantaises butter bisuites recipe

Makes about 18

115g of unsalted butter

85g of vanilla sugar

3 egg yolks, beaten with cold water for glazing

225g of plain flour

pinch of salt


Beat the butter and sugar together until soft then work in the yolks.

Using a spatula gentle fold in, half of the flour and the salt. When evenly mixed fold in the rest of the flour.

Using a round bladed knife, lightly form into a dough.

Then knead until it no longer sticks to your fingers, cover and chill

On a lightly floured surface, roll out the dough thinly. Cut out circles of about 2 ins diameter.

Brush with egg carefully transfer to a baking sheet, chill for 30 mins.

Preheat the oven to 190c or 375f gas 5 and bake for 10 mins.

Leave to cool slightly on the baking tray.

Then carefully transfer to a wire rack to cool.
