Ingredients


Homemade Carrot soup

Potage Crecy

A simple to make French recipe

450g / 1lb carrots peeled and chopped small

350g / 12ozs potatoes peeled and chopped small

100g / 4ozs turnips peeled and chopped small

50g / 2ozs butter

1.4 ltrs / 2 1/2 pts warm water

salt and pepper

175g / 6ozs onions peeled and chopped small



Melt 1oz of butter in a large pan and cook the carrots and turnips. Over a low heat until they are soften without colouring.

Stir occasionally add the salt and pepper, water and potatoes. Simmering uncovered for a full hour after boiling point is reached.

Meanwhile cook the onion in the rest of the butter and set to one side.

Blend the soup and if it is to thick dilute with a little milk. Mix in the cooked onion check the seasoning.

Simmer for a further 10 mins and then serve
