A Homemade French Carrot Soup
Melt 1oz of butter in a large pan and cook the carrots and turnips. Over a low heat until they are soften without colouring. Stir occasionally add the salt and pepper, water and potatoes. Simmering uncovered for a full hour after boiling point is reached. Meanwhile cook the onion in the rest of the butter and set to one side. Blend the soup and if it is to thick dilute with a little milk. Mix in the cooked onion check the seasoning. Simmer for a further 10 mins and then serve
