Omelette recipe

Break the eggs into a bowl add water and seasoning.

Melt the butter in a omelette pan [ 6in ] and heat until just beginning to brown.

Add the egg mix and cook rapidly using a fork to stir the mixture. Bring some of the cooked mixture to the centre of the pan, allowing the uncooked eggs to come in contact with the pan.

Continue cooking till the top is lightly set and the under side is a light golden brown.

Fold the omelette in half and slide on to a warm plate.

Cheese Omelette recipe

Add 1 oz finely grated cheese to the omelette just before folding

Omelette au jambon et champignon

Ham and Mushroom Omelette recipe

Melt 1/2 oz of butter in a small saucepan add 1ozs of finely diced ham fry for 2 - 3 mins.

Add 1oz of finely sliced mushrooms to the pan cook for a further 2 - 3 mins.

Season to taste add filling to the omelette just befor folding.

Potato Omelette recipe

Cut a small cooked potato into thin slices, melt 1oz of butter in a frying pan and fry until crisp and golden.

Sprinkle with 1/4 teaspoon of chopped dried rosemary then add to the omelette just before folding.
