Break the eggs into a bowl add water and seasoning. Melt the butter in a omelette pan [ 6in ] and heat until just beginning to brown. Add the egg mix and cook rapidly using a fork to stir the mixture. Bring some of the cooked mixture to the centre of the pan, allowing the uncooked eggs to come in contact with the pan. Continue cooking till the top is lightly set and the under side is a light golden brown. Fold the omelette
in half and slide on to a warm plate.
