Duck with orange recipe
IngredientsCanard a l orange Duck with orange recipe 1 x 4lb duck 2ozs of butter 1/2 pint of water 1/4 pint of white wine salt and pepper 1 bay leave 3 oranges 1 tablespoon of arrowroot or corn flour |
Duck with orange
Place the duck in a roasting pan and prick the skin in 6- 8 places and rub with butter. Place the water and the wine in the base of the tin with a sprinkling of salt and pepper.
Add the bay leave and the zest of one orange. Roast the duck in a moderately hot oven 375f gas 5 for 30 mins.
Then reduce the heat to 325f gas 3 for 1¼ / 1½ hours allowing 30 mins cooking time for each lb.
Put the duck on a serving plate and keep hot strain the cooking liquid into a saucepan and make up to 3/4 pint with water.
Add the juice of 2 oranges and the rind of one cut into matchsticks strips. Mix a little of the water with the arrowroot or cornflour and add to the sauce.
Bring to the boil stirring constantly and then simmer for 3 - 4 mins.
Garnish the duck with slices of orange and pour a little sauce over the duck.
Serve hot with the rest of the sauce.
