Easy to make French onion soup
IngredientsSimple French onion soup Soupe a l'oignon 250g mild onions 70g butter 1 table spoon of flour freshly ground black pepper salt 6 thin slices of french bread [baguetta] 100g grated gruyere cheese |
prep time 70 mins
serves 6

peel and finely chop the onions. heat 50g of the butter in a heavy saucepan, add the onions and fry slowly until soft and golden brown about 30 mins
Sprinkle with flour and pour 1.5 litres of water into pan Stir and season with salt and pepper cover and simmer for a further 30 mins
meanwhile lightly toast the bread and set aside
Pour the soup into 6 ovenproof bowls.Place the bread on top and
sprikle with cheese and flakes of remaining butter. When cheese
is bubbling remove and serve.You now have a easy to make french

This recipe originated in bars and brasseries of Les Halles it was a breakfast pick me up early risers to the central market or for nightowls a cure for the effects of alcohol.The nickname for this soup is drunkard's soup
