A special Onion soup recipe
IngredientsFrench onion soup recipe serves 4 prep time 25 mins cooking time 40 / 50 mins 50g [ 2ozs ] unsalted butter 4 medium onions cut in half then sliced thinly 1 heaped tablespoon of plain flour 200ml [ 7flozs ] dry white wine boiled for 30 seconds to remove the alcohol 1,5 litres [ 2 ½ pints ] boiling water 1 tablespoon of sugar salt and pepper 12 slices 1/2 inch thick of french baguette 150g [ 5ozs ] cryene cheese grated |
Preheat oven to 200c or 400f / gas 6
In a large pan melt the butter stirring often and season well. Add the onions and cook for 20 / 30 mins to achieve a rich brown colour.Stir every 2 /3 mins to stop it burning
Sprinkle the flour on a baking sheet and place in the oven for approx 10 mins until lightly coloured. Then stir into the onions and mix
Gradually stir in the wine and one third of the water mix well and add the remaining water. Bring to the boil then simmer for 15 mins taste and adjust seasoning if needed and add the sugar
Arrange bread on a baking tray and sprinkle with the grated cheese and place in oven till slightly brown. Place soup in bowls and add the bread and serve
