Gateau au chocolat

Chocolate cake recipe

125g / 4 ozs plain chocolate grated

5 eggs separated whites stiffly beaten

250g / 8 ozs of castor sugar

125g / 4 ozs of butter softened

125g / 4 ozs of plain flour


Beat the egg yolks with the sugar until the mixture is thick and a pale colour.

Add the butter and chocolate beat while gradually adding the flour.

Fold in the beaten egg whites and pour the mixture into a buttered cake tin 20cm / 8 inch.

Bake in a preheated oven to 180c or 350f gas 4 for 30 mins.

Or until a sharp knife inserted into the centre of the cake comes out clean.

Turn out on to a wire rack to cool.
