Remove the stalks and ribs from the spinach leaves, wash and pat dry. Finely chop the spinach and herbs to make about 3 tablespoon full.

Mix the mayonnaise with the mustard and vinegar season with salt and pepper

Peel the eggs and cut in half lengthwise remove the yolks. Chop the yolks up and mix into the mayonnaise, stir in the chopped spinach and herbs.

Fill each egg half with a spoonful of the mixture. Slice the gherkins thinly to garnish the eggs.

Wash and pat dry the lettuce leaves, divide between 4 plates and arrange the stuffed eggs on the top

Variation

For the stuffing mix 1 teaspoon of mustard, 1 tablespoon of wine vinegar, 2 tablespoon of olive oil and 1 tablespoon of small capers mix with the hard boiled egg yolks season with salt and pepper
