Ingredients


Marrow and leek soup

Soupe de courge

serves 6

600g / 1lb 3 ozs marrow peeled and diced

500g / 1lb potatoes peeled and diced

3 leeks trimmed and sliced

2 medium onions thinly sliced

4 tablespoons of oil

salt and pepper

grated nutmeg

croutons to serve


Heat the oil in a large pan cook the onions and leeks until transparent.

Without allowing them to brown add the marrow and potatoes heat through.

Add 1.5 ltrs of hot water to the pan and seasoning.

Cover and simmer for 15 to 20 mins.

Then rub through a sieve or puree in a blender.

Serve very hot with croutons.
